The coffee’s varietals include Kartika, Lini S, and Sigararutang. Kartika is an acronym for Kopi Arabika Tipe Katai, which translates to "Coffee Arabica Type Catuai." It is a local Indonesian mutation of the South American Catuai, celebrated for its unique and excellent flavor profile.

Processing "Natural"

The natural processing method, used for Mistari, is a traditional and labor-intensive approach. In this process, coffee cherries are harvested at their peak ripeness and then laid out in the sun to dry for approximately two weeks. This drying period allows the cherries to absorb sunlight, developing their flavor profile naturally.

The natural process enhances the coffee's inherent sweetness and fruitiness, resulting in the subtle strawberry and cherry wine notes that distinguish Mistari. The hazelnut, praline, and chocolate undertones are also accentuated through this method, creating a well-rounded and complex cup.

Natural processing requires careful monitoring and regular turning of the cherries to ensure even drying and prevent spoilage. The result is a coffee with a distinct and vibrant character, capturing the essence of its high-altitude origins in Temanggung, Java.
